Kale crisps

This is a variation on a snack some Canadian friends at Uni introduced me to, it sounds grim, I was very sceptical!! There are a couple of little tricks I’ve found that make these work really well. Firstly, using a fan oven is infinitely better than the antiquated contraption we were trying to use in uni halls! Secondly, be sure to use grease proof paper as opposed to tin foil. Finally, lemon juice.

Ingredients:

As much kale as you can spread onto the grease proof paper on your baking tray

1 tsp olive oil

Squeeze of lemon juice

Pinch of salt

Method:

  1. cut a sheet of grease proof paper to fit a large oven tray
  2. Spread the kale out so that it’s in a single layer
  3. Drizzle over the olive oil, trying to disperse as evenly as possible
  4. Add lemon juice  and salt as with olive oil
  5. Place in fan oven at 200°C, keep watch to make sure it’s not burning and remove when crispy ~ 4-5 mins
